187 Observed American cheese to register an internal temperature of 55F and white American cheese to register an internal temperature of 42.3F at the time of inspection. Observed both cheeses to be sitting in a pan on top of ice. Person in charge stated cheese was placed on ice from a cooler approximately 2 hours prior to inspection. Discussed with person in charge that for ice to work as an exterior coolant, the food must be surrounded by the ice, not just sitting on top of it. Person in charge completely surrounded cheese with ice at the time of inspection. Corrected on site
136 Observed an open employee beverage sitting on a table near the drive-thru, directly above single-use utensils and hot chocolate mix. Employee covered beverage and relocated it to prevent the contamination of food, clean dishes, clean linens, clean equipment, and single-use items.

Observed the corner trim to be pulling away from the wall at the entrance to the dry storage area. Observed damaged coving tiles by the mop sink, to the right of the walk-in cooler door, and inside the walk-in cooler. Observed a gap along the tops of the coving tiles in the walk-in cooler.

431 Observed black debris building up on the floor of the walk-in freezer. Observed splashed debris on the wall in the dry storage room behind the oil boxes. Observed a black, mold-like substance on the wall immediately to the right inside the walk-in cooler.

232 Observed tape wrapped around the handle of an in-use fryer basket on the main line. Discussed with person in charge that tape is not cleanable and should be removed.

Note: Observed the hot water to be turned off to the hand sink by the walk-in cooler door. Person in charge stated they have had issues with the hot water so they turned it off to that sink to help get hot water to the more used hand sinks. Inspector turned on the water and observed all hand sinks to have hot water of at least 100F at the time of inspection. Discussed with person in charge that they must be able to produce hot water of at least 100F at all hand sinks during peak water demands of the establishment.
